M/V Sikumi Fall Newsletter
Dear Web,

Fall is here and the MV Sikumi is docked in Seattle after a great season in Southeast Alaska.  We had unforgettable guests on board and saw new and amazing sites each voyage.  We witnessed Humpback Whales breaching and stood back in amazement as one our clients reeled in a monster 277-pound Halibut!  What an incredible season it was!!!

Dear Web
Happy fall, it's my favorite season.  Time to festoon the front porch with pumpkins, gourds, and cornstalks.  Time to put a log in the fireplace and soup in the crock pot; a perfect opportunity to sit and enjoy photos with family and friends, or to start planning for an upcoming adventure.
 
Our past season was filled with new friends from the Netherlands, New York, Missouri, Maine, England, Georgia, Florida, Washington, California, Colorado, D.C., Canada, Virginia, North Carolina, New Zealand, Texas, Ohio, Montana, Australia, Wyoming, and my home state of Minnesota!  New first time adventures, and a deep appreciation for the indescribable up close and amazing glaciers, wildlife, and natural beauty of Southeast Alaska.
 
Thanks to our clients for their positive and constructive comments on completion of their trip.  Crew and exceptional service were most lauded followed by "once in a lifetime experience," and "best vacation ever."
 
During the winter, our crew is enjoying their time off.  They're crab fishing and visiting family.  They're going to go snowboarding once the snow flies.  They are working in Patagonia, and enjoying art, music, and culture in Seattle.  Eating the jam they made from fresh berries.  Preparing for the arrival of a new baby in the coming weeks.  Introducing a new cookbook.  But by May, we'll all be ready to get our deck slippers on, so please come join us.
 
I recently had the opportunity to share Chef Jenny's Corn and Turkey Chili with family friends.  It provided me a chance to bring some comfort food to someone else, and to try out a recipe from Jenny's new cookbook.  I would highly suggest the chili.  It's easy, filling, and brings back fond memories of
the fun times I had on board this past summer.
 
Thanks to our crew and passengers for making our 2008 season so memorable.  Thank you for believing as we do, that a small cruise boat vacation brings us together in valuing friends as family, nature, and all the delights Alaska provides us.

Recipe from Chef Jenny
Jennifer Johansen: Sikumi's 2008 Personal Chef

Chef Jenny Jenny enjoyed her first season as the boat's chef. She's so excited she has started work on a cookbook, and she decided to share a recipe with everyone in our newsletter. Guests may remember her corn and turkey chili from their cruise this year.

Corn and Turkey Chili
Makes 1 BIG pot. Make it all and freeze the rest for a rainy day!
 
2lbs lean ground turkey (you can sub black bean burgers or use both together)
1 diced medium white onion
4 minced garlic cloves
1 can whole kernel corn
1 can refried beans
2 cans small diced tomatoes (not tomato paste)
About 6 oz green Tobasco sauce
3 tablespoons kosher salt
1 tablespoon ground cumin
1 tablespoon ground coriander
2 tablespoons whole dry oregano
1 1/2 teaspoon cayenne pepper
Spicy V8 or chicken stock to get your chili to the consistency you like... thick like a stew or thin like a soup
 
In one large soup pot over medium high heat, saute your turkey. Once there is a good browning (about 5 minutes) add in diced onion, minced garlic, salt, the dry herbs and spices. Stir occasionally to prevent burning. Let all this cook together about 8 to 10 minutes. Add the diced tomatoes, corn, refried beans and hot sauce. Let all this come to a simmer. Add chicken stock or V8 to your liking. Serve piping hot with corn muffins, shredded cheese and sour cream.




Jenny's CookbookInspired by her experiences cooking on the Sikumi this past summer. Chef Jenny has put together the first ever Sikumi Cookbook.

The Book is currently undergoing a final edits before it is sent to the printers.

The book will be available for sale at our ONLINE STORE before Christmas
